Chocolate Raspberry Mousse

The silky smooth decadent layers of creamy chocolate and raspberry make this layered mousse dessert irresistible.


Chocolate Sauce

  • ⅓ cup sugar      
  • 2 cups cream    
  • ⅓ cup water
  • 11.5 oz dark chocolate


  •  2 cups heavy cream    
  • 1 Tbsp sugar
  • 10 oz jar Heidi’s Raspberry Jam


  1. For the chocolate sauce, add water, sugar, and cream to a non-reactive pot. Bring mixture to a scald over medium heat, stirring to dissolve sugar.

  2. While cream mixture is heating, add chocolate chips to a separate bowl. Once cream mixture is ready, immediately pour over chocolate and let it melt for about 10 minutes.

  3. Whisk chocolate mixture to combine until smooth. Let cool in refrigerator for 1 hour or overnight.

  4. For the raspberry mousse, slowly whisk together cold cream and sugar until foamy either by hand or in stand mixer, then increase speed until stiff peaks form.

  5. Add 1 cup of the chilled chocolate mixture and whisk until combined being careful not to over whisk and make butter.

  6. Dollop alternating layers of mousse, chocolate sauce, and jam into a glass vessel of your choice.
