A crisp and flavorful sandwich that’s easy to make with Heidi’s homegrown Greek Oregano. Perfectly refreshing on a hot summer day.
Ingredients
Herbed Feta
- 8 oz Greek Feta (Tucumcari Mountain Cheese Factory if available)
- 1 Tbsp Greek oregano (shop here)
- ¼ cup high quality olive oil + extra for drizzling
- Squeeze of lemon
- Salt & pepper to taste
Sandwich
- French baguette or other soft bread
- 1 fresh tomato, sliced
- Crispy romaine lettuce
Directions
- In a medium bowl, crumble the feta.
- Add the Greek oregano, olive oil, squeeze of lemon, salt and pepper.
- Using a fork, combine until all oil is incorporated and herbs are well dispersed.
- Spread the feta mixture generously across the bread.
- Top with tomatoes and lettuce. Drizzle olive oil.
