A deliciously tart and tangy dressing perfect for a bed
of fresh baby salad greens on a hot summer day.
Ingredients
- ¼ cup of champagne vinegar
- ½ cup olive oil (best quality)
- 2 Tbsp onion or shallot diced very fine
- 4 Tbsp Heidi’s Raspberry Jam
- Salt and Pepper to taste
Directions
- Combine all ingredients except oil in a mixing bowl or mixer.
- Season with salt and pepper
- Slowly drizzle oil while mixing continuously.
- Taste and adjust seasoning
