Mini Doughnut

Deliciously fluffy clouds of cinnamon sugar goodness filled with your favorite flavor of Heidi’s Jam.


  • 1 ¼ cups milk heated to 100°
  • 2 ¼ tsp yeast (one package)    
  • ¼ cup sugar
  • 2 eggs
  • 4 oz butter melted and cooled  
  • 4 ¼ cups flour
  • 1 tsp salt        
  • Oil for fryer
  • Cinnamon for tossing
  • Sugar for tossing     


  1. In a small bowl, dissolve sugar and yeast in warm milk and allow it to activate and become foamy, 10-15 min.

  2. Combine eggs and butter and add to milk mixture.

  3. In a large bowl combine the flour and salt together mixing well.

  4. Pour the wet ingredients into the dry ingredient bowl and combine. The dough should be slightly sticky.

  5. Knead until smooth then place in bowl and cover with a kitchen towel.

  6. Allow dough to rise until doubled in size. Meanwhile,  begin heating the oil in the fryer to 350° to 375°.

  7. Dust work area and rolling pin with flour. Push dough onto work surface and roll out to ½ inch to ¼ inch thickness evenly. If dough begins to shrink allow it to rest before continuing.

  8. Once rolled out, cover with a damp towel and allow  dough to rest for 10 minutes before cutting to avoid snapback.

  9. Using a 3 ½ cookie cutter cut dough into rounds and place on a baking sheet. Cover with damp towel again

  10. Fry until golden brown flipping once, making sure both sides are even in color. Meanwhile, combine cinnamon and sugar in a small bowl for tossing.

  11. Remove doughnuts from fryer and allow to briefly drain on a paper towel lined tray.Toss doughnuts in cinnamon sugar mixture and  place on cooling rack to rest.

  12. Use a piping bag to fill each doughnut with your choice of flavor of Heidi’s Jam.
